Ingredients

1 Tbsp butter

8 Slices whole-grain bread

1 Tbsp Dijon Mustard

6 oz shreded sharp Cheddar cheese

1 Granny Smith apple, peeled, cored and sliced.

8 strips cooked bacon

Instructions

Heat the the butter in a large skillet or nonstick sauté pan over low heat. Slather 4 slices of bread with the mustard, then divide the cheese, apples and bacon among them. Top with the other bread slices and add to the hot pan. Cook until deep brown and crunchy about 10 to 12 minutes total.

Broke and Fabulous Grilled Cheese

This simple grilled cheese variation uses grated cheese and sourdough or rye bread for a special twist. Find more essential recipes from this book for women who never learned to cook.

1 tbsp butter, softened.

4 slices sourdough, rye or other bread

1 cup grated cheddar

1. Spread butter on 1 side of each slice of bread, making sure it reaches all the way to the edges. Mound unbuttered sides of 2 of the slices and 1/2 cup grated cheese each. Set remaining slices on the cheese, butter sides up, and press together.

2. Heat large cast-iron skillet over moderate heat. Cook sandwiches until undersides are browned, about 3 minutes. Turn over and cook until second side is browned and cheese is melted, about 3 minutes longer. Cut in 2 and serve.

Tyler Florence Mozzarella Grilled Cheese

I have become a Pinterest addict. In doing so, I have come across a number of great recipes. This recipe from Tyler Florence is amazing.

4 slices thick-cut sourdough bread (you can use rye also)

1 ball (1 pound) fresh mozzarella, cut into 1/4-inch slices

2 plum tomatoes, cut into thick slices

1 cup fresh basil pesto, recipe follows

Kosher salt and freshly ground black pepper

Extra-virgin olive oil

Basil pesto (You can skip this step and used jarred pesto. My favorite is Giada sold at Target stores.)

1/2 cup pine nuts

2 cups fresh basil leaves

1 cup fresh Italian parsley leaves

1/2 cup Parmesan or Romano

2 garlic cloves

1/4 teaspoon salt

1/2 cup extra-virgin olive oil

To make pesto:

Toast pine nuts in a skillet over medium heat until fragrant, about 5 minutes. Combine pesto ingredients in a food processor and pulse until well combined but still rough-textured. If you have a panini press, turn it on to warm up; otherwise, set a cast iron skillet over medium heat. Assemble sandwich by smearing insides of bread slices with pesto. Arrange a layer of sliced tomato and season with a few turns of fresh pepper. Layer the mozzarella slices over the top and then place another piece of bread on top to make the sandwich. Drizzle olive oil over skillet's surface and place sandwiches on the hot skillet or panini press. If using a skillet, place another heavy skillet over the top to form a "press". Turn after 2 to 3 minutes and replace weight. The sandwich is ready when golden brown and mozzarella has melted around the edges.

Guacamole Grilled Cheese Sandwich

Guacamole Grilled Cheese Sandwich

Yield: 2 sandwiches

Prep Time: 5 minutes

Cook Time: 5-7 minutes

The guacamole takes this grilled cheese sandwich to a whole new level of goodness.

Ingredients:

To make the guacamole:

2 ripe avocados

1/2 small onion, minced

1 clove garlic, minced

1 small jalapeño, stems and seeds removed, minced

2 tablespoons cilantro leaves, finely chopped

1 tablespoon of fresh lime juice

1/2 teaspoon coarse salt

A dash of freshly grated black pepper

1 Roma tomato, chopped

4 slices crusty white bread

4 slices Cheddar cheese

Butter, for buttering bread

Directions:

1. To make the guacamole-cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a large bowl. Using a fork, mash the avocado. Add the onion, garlic, jalapeño, cilantro, lime juice, salt and pepper. Stir until well combined. Add the chopped tomato and stir.

2. Heat a pan or griddle to medium-high heat. Spread desired amount of guacamole on both slices of bread then top with cheese. Butter outer slices of bread and grill on one side for about 2 minutes or until golden and crispy. Flip the sandwich and grill until golden brown. Make the other sandwich the same way and serve warm.

Roasted Red Bell Pepper Grilled Cheese - My personal favorite!

2 Slices of bread

2 Jarred roasted red bell peppers

2 slices provolone cheese

3 tbsp butter

Heat skillet over medium-high heat. Assemble sandwiches with roasted red bell peppers in between cheese slices and bread. Butter outside of bread and place butter side down and heat on each side for a few minutes until golden brown.

Grilled Cheese and Watermelon Sandwich

Unique grilled cheese!

The cheese called Halloumi has a higher melting point than regular cheese and is typically found in specialty stores.

1 watermelon cut into 16 pieces, each about the shape of a slice of bread

Kosher salt, to taste

Freshly ground black pepper, to taste

8 ounces of arugula leaves

2 pounds Halloumi cheese, cut into 8 slices, each about the size of a slice of bread

4 tablespoons extra-virgin olive oil

Heat charcoal or gas grill to 350 to 450 degrees, using coals or gas burners under only half of the grill area, or heat grill pan over stove.Cut watermelon into 16 slices and season with salt and pepper. Divide the arugula leaves among half the watermelon slices and set aside.Slice cheese and set aside.Lightly brush both sides of the cheese with olive oil and put them on a cookie sheet. Place the oiled cheese slices on the grill, using care to avoid direct heat. Grill for about 10 minutes, turning frequently until golden brown.Assemble the grilled cheese sandwiches by placing a grilled slice of cheese on top of a watermelon slice; top with arugula. Top with a second watermelon slice. Cut sandwich in half. Serve.
